I would like to share different things you can do with your leftover rice.
1. Simple fried rice
Ingredients:
Leftover rice
Onions
Frozen veggies-potatoes,carrot,peas (you can use any veggies -frozen or non frozen)
Egg (optional)
Ginger-garlic paste
Red chilli powder
Coriander powder
salt
Procedure:
Heat oil and fry onions with ginger garlic paste and turmeric powder. Then fry all the veggies. After they are friend add salt,red chilli powder and coriander powder. If you like egg then you can add them now and scramble them. Finally add rice and fry it for sometime
2. Thiragamata annam (thadka rice)
All you do is head oil,put thadka in it. Fry some onions and green chillies and then add rice and mix.
3. Lemon rice
Ingredients:
Rice
Lemon juice
Green chillies
Ginger
Dhalia or pappulu
For seasoning: Mustard seeds,Cumin seeds, Red chillies, Channa dal,urad dal, Curry leaves, Peanuts.
1. Grind green chillies, Ginger,Dhalia
2. Heat oil and add all the ingredients used for seasoning. I also add turmeric to it so that there wont be any raw smell.
3. Add lemon juice and salt to the rice and then add the seasoning.

In No. 1, when you are frying the vegetables, instead of adding chilli powder and coriander powder, add soy sauce, rice vinegar and chinese chilli sauce. also, don't use turmeric powder. it will turn into an excellent chinese fried rice.
use pineapple chunks, along with vegetables, for an excellent pineapple fried rice.
No. 3 is a classic in many south indian homes.
Had never heard of No. 2. should try it. should taste good with chutney powder or pickle, right?
